Dalgona Mushroom Coffee

Love coffee and ‘shrooms? We think you will love this dalgona mushroom coffee. It’s silky, sweet and a great way to get your daily dose of medicinal mushrooms.

Dalgona coffee, or whipped coffee, seems to have originated in South Korea in the 1970s/80s and has reached the wider global population over the last few months, though there are other cultures that have their own variations including ‘frappe’ in Greece, and ‘beaten coffee’ in India. Meaning ‘honeycomb toffee’ in Korean, it is very sweet and made with just 3 ingredients, so is super easy to whip up yourself at home, and makes a great substitute for your favourite high street lattes during this lockdown period.

Dalgona coffee is a thick, rich coffee, and usually mixed with milk and ice. We used our Reishi Zen Coffee for extra chill, you can use our Cordyceps coffee if you need more of a boost! The traditional dalgona recipe is super simple, and calls for equal parts sugar, instant coffee and boiling water — usually 1-2 tablespoons of each, and you can also double, or triple this to make a larger batch.

While the caffeine levels of mushroom coffee tend to be lower than standard coffee, the synergy of medicinal mushrooms and coffee means more benefits and less downsides than your average cup of coffee. Mushrooms are packed with nutrients including vitamins, minerals, and antioxidants. Mushrooms and coffee tend to have many synergistic benefits from brain and energy support, to antioxidant effects, combining some of these powerful substances that help to protect the body from free radical damage.

Reishi mushrooms are a fantastic sources of adenosine, which helps block some of the stimulatory effects caused by coffee like anxiety and jitters. Mushrooms also pair nicely flavour wise with caffeine, the perfect way to get all the benefits of the mushrooms and coffee without any of the downsides. Reishi was used traditionally to support relaxation, stress response and overall wellness. Dalgona Mushroom Coffee

Ingredients

2 Tbsp Reishi Zen Coffee

1-2 Tbsp Coconut Sugar

2 Tbsp Hot Water

Milk of Choice

Ice

Method

  1. Make the dalgona mousse by combining the reishi coffee, sugar and hot water and mixing well (We’ve found an electric whisk or powerful milk frother best for a thick consistency and less arm work!)
  2. Add the ice and milk of choice to a glass (alternatively heat the milk if you want to serve warm)
  3. Spoon the dalgona mousse on top.
