Lion’s Mane Chocolate Truffles

We love adding our mushroom powders to recipes for an extra nutritional boost. Today we have a delicious chocolate truffle recipe featuring our Lion’s Mane powder from Sophie @moonchildrecipes. These are not your average chocolate truffle, they are nutrient packed with some of our favourite foods for health including Cacao and Avocado and no refined sugar, or oils in sight. Try these Lion’s Mane chocolate truffles for a sweet treat, or brain supporting snack any time of day.

Why add our super ‘shrooms to your recipes? Well Lion’s Mane powder has many benefits for health including immune system, and is rich in anti-inflammatory and anti-bacterial compounds which may support digestive health. It is best known for its cognitive benefits, it stimulates the production of nerve growth factor (NGF) which helps maintain neurons, which are the brain cells responsible for helping us to process and transmit information, aiding learning and memory. Grab one of these chocolate truffles for a mid-afternoon brain boost.

Lion’s Mane Chocolate Truffles
Ingredients
  • 60g good quality dark chocolate
  • 1 large ripe avocado
  • 1 tsp lion’s mane powder
  • 2 Tbsp maple syrup
  • 1 tsp pumpkin spice  (alternatively use your favourite spice, cinnamon works well)
  • 2 heaped Tbsp raw cacao powder
Method
1. Melt chocolate over a double boiler
2. Mash avocado
3. Once chocolate has melted mix in maple syrup, remove from heat and allow it to cool a little.
4. Fold in the mashed avocado, lion’s mane and spices, refrigerate the mixture for at least 2 hours.
5. Once the mixture is firm, take heaped tsp amounts and roll into balls.
6. Sprinkle cacao on to a clean surface and roll each ball in the cacao powder until evenly coated.
7. Store in refrigerator until ready to serve
